I mainly use my MBP for writing, Photos app, and internet. I know a MBP is overkill for me already, but I love the screen size so I always opt for it instead of smaller MacBooks.

My question is, from a performance standpoint, will I notice a difference (based on my main use-cases, above) between the 2.6GHz 6-core 9th-generation Intel Core i7 processor and the 2.3GHz 8-core 9th-generation Intel Core i9 processor, as well as between the AMD Radeon Pro 5300M with 4GB of GDDR6 memory and the AMD Radeon Pro 5500M with 4GB of GDDR6 memory?

I’ll be coming from a 2013 MBP.

No, you won't.

My main machine is a 2014 2.2 Ghz, quad-core system with Intel integrated graphics. It does everything I need it to at this time though there are some times when I do video editing where the CPU gets consumed. Even the base 16 will be a lot faster than what I have now. Will you notice a difference? Probably. But it won't be meaningful. You can feel the difference between a 100 ms response time on a web page loading and 700 ms but a fraction of a second won't mean that you'll read it any faster. It will just feel snappier.
