I know this might be a very silly question but it really worries me.

My Sharing preferences indicate (see second picture)
Myself: can "read and write" ,
Staff: can write in a desposit box (I really don't know what it means)
Everyone: do not have access

However my folder informations indicates that Myself, Staff and Everyone can Read and Write (see first picture)

Why is there a difference, can really everyone read and write my files???

If I understand the question correctly. Your shared folders have the permissions as you described them in regards to network sharing.

Myself: can "read and write" ,
Staff: can write in a desposit box (its a drop box that users can drop things into but cannot see the contents of)
Everyone: do not have access

Your folder on your computer as it is setup may have different permissions but may not be visible to others over a network.

I would need to know the actual folder paths (anything important obfuscated of course) and maybe more of a view of the sharing settings to really know.
 
your understanding is correct. The folder's that are in my user folder (but not in my document folder) have sharing permissions different from the ones in my "preferences".

Does someone need my username and password to access them or just being linked to my network is enough?
