Use GSM standard in address book

The simple answer, but maybe not the easiest for you, is to use the international format in your address book. In preferences, under the Phone tab, enable the "Automatically format phone numbers" and chose the +1-123.... setting.
The GSM standard is to always substitute the + sign with the international prefix for whatever country you are in. It is also smart enough to strip the country code and insert the 0 if you are in the "home country" of the number you are dialing.

"basically my contacts are stored in Uk format on my phone, synced from iTunes i.e 01234 567890 "

If you store the number as +44-1234-567890, the number dialed in the UK would actually be 01234-567890, whilst if you were in the US and dialed, the actual number dialed would be 01144-1234567890.

Hope this helps.
