Recent update to Catalina messed up apple mail settings

After the recent Catalina update my Apple mail features don't work. For example, my signature no longer automatically appears in emails I send. Stop "fixing" stuff if it's just going to break things that were working fine. So annoying!!

Not sure but it started happening less than a week ago.
