You should find the deleted email in the Mail Trash, unless you emptied that. If you emptied it then you are out of luck.

when I delete my mail, it doesn't go to trash I have to physically move it there. What setting should I change so it does it automatically?

Mail menu -> Preferences -> Accounts tab -> click on the account in question -> Mailbox Behaviors -> Trash: Move deleted messages to the Trash mailbox (check this box). It should have been checked automatically -- you may have accidentally unchecked it at some point. Also select the appropriate option under "Permanently erase deleted messages..." if you so desire.
