After poking around in the app store for a little while I found what I consider to be an excellent multi-track recorder for the iPad and just wanted to recommend it to any musicians/songwriters who may be looking for such a thing (as I didn't see any other mentions of it on the forum so far). The app is called Multitrack DAW by the company Harmonicdog. I've only had it for a week and have only used it a couple of times but from what I can tell it is fantastic at what it does. It might lack some of the more advanced features that pricier apps contain, but for my purposes it was well worth the 10 dollars. One can record and edit multiple tracks, adjust pan, volumes, bounce tracks etc. There is even a punch option. The UI is very simple and straightforward (which I like) and it doesn't feel overloaded with buttons and knobs. It also loads and renders audio files very quickly and from what I've experienced is quite reliable. I was looking for an app to record demos and song ideas mobiley and this app is perfect for this. If I wanted more options, effects or settings I would go to a desktop application. Oh and it's a universal app as well (though there is no way to sync between devices from what I can tell). As I said I haven't explored Multitrack ultra-thoroughly but just wanted to let people know that so far it seems like a great option if you are looking for a simple and clean multi-track recorder/editor for your iPad. I hope this little review helps someone out there.
