Yo guys,

I am having trouble finding a display that can cater for my needs. Here is a list of what I need in the display:

1) HDMI Input (I am a HEAVY PS3 gamer)
2)24"-27" Size
3) 1080p resolution
4) Ability to plug in a Mac (will be either Mac Mini or MacBook Pro)

I would suggest just getting an HDTV. One of those would suit your needs perfectly. As for connecting a Mac, as long as you have a Mini DisplayPort (assuming it's new) to HDMI/DVI connector and the TV has the proper ports, everything should work out.
 
Ok, but I feel that HDTVs are too expensive at too big, like around the edge of the display they usually have a big 'open' area, whereas the monitors are smaller and cheaper.

The other option is a 27" iMac with some adaptor for the PS3, what do you think will be best for me seeing as I am an avid gamer?
 
Definitely go with a Dell Ultrasharp. I have the 2709W, and I use it for exactly the same things you do, and it's awesome. Although I got it for $550 on a one day sale a year and a half ago, and last I saw the price was around $900.

And a big plus for the Dell Ultrasharps is the warranty. Just 1 dead/stuck pixel is good enough to have them send out a replacement within the 3 years. I would know, I had to replace mine about 3 months in for a tiny spec and the replacement is gorgeous.
 
You don't need HDMI input. A HDMI->DVI cable or adapter will do just fine.
