It's almost 2018 and there still is no built-in ability to record streaming audio playing from your Mac. How ridiculous is that?

Question: is there a free third party, viable solution to do so? Loopback cables don't work on my MacBook Air and I find Soundflower highly cumbersome.

It's so easy. Install Soundflower. Create a multi-output device using Audio/MIDI Setup. Send the output to Built-in output and Soundflower so you can hear what you're recording. Record using QT Player using Soundflower as the input.
