As it's still not jailbroken, you can't use Ryan Petrich's excellent “Display Recorder”, the by far the best recorder apps available. (See http://www.iphonelife.com/blog/87/tutorial-how-you-can-record-your-skype-video-calls-last for its capabilities - yes, even Skype calls can be recorded, with video!)

BTW, do you have access to an iPad 2? As you could only record at a reduced resolution thru the VGA / HDMI adapter, isn't it easier (and immensely cheaper, see below) to just use a jailbroken iPad 2 with “Display Recorder” for this kind of work?

If you can't, prolly the best option is the recently-released Full HD HDMI recorder. It costs $300. If the price isn't a problem (it's still WAY cheaper than comparable, earlier recorders!), tell me and I look up the manufacturer. (It was released some 2-3 weeks ago. I haven't stored the exact type and name of the recorder, though.)

Would it be possible to use the $39 apple adapter ( The one with HDMI and apple sync cable on one end, and it plugs into iPad on o there end), and then send that signal into a hdmi to component box, and then use an eyetv HD? I already have an eyetv HD, So I'm thinking maybe all i would need is the hdmi to component box.

The link to the HDMI recorder would be great, also..

They're very expensive too (as, basically, they need to put an entire computer in a converter - with simple wires, this isn't doable as HDMI is digital while RGB is analog). Price-wise the only exception I've found was http://www.amazon.com/HDMI-RCA-component-AV-Converter/dp/B002WBOQPU for $32 but it only outputs 720p / 1080i, which means lower IQ.

Will try to find the HDMI recorder. I think it was Engadget that reported on it some weeks ago (a $299 1080p HDMI recorder). I should have saved the article...
