recording screen output for video?

I've seen video's and howto's around the place that have someone using a mac, Eg. an online apple seminar.

someone might be demonstrating how to use a program or something, and the screen's output is shown in the video.

what do I need to do that? I'd like to do some "software reviews", with screen output and my voice over...
