If I were to record a video using an iPhone 4s, how long can I go for, assuming the battery is fully charged? How much memory does the video take up on the iPhone 4s SSD?
 
There are many variables involved.

True.

Recording footage of my nephew playing in the playground takes up less memory than recording footage from a live event/concert.

The type of lighting, movement and activity, type of sound will all vary the video size.
 
There is no way of really telling how much space a video will take up.

It's very easy. Record for 10 minutes and that's how much space it takes up. There is no reason to believe it will be much more or less for different recording sessions.

With all that said, the size per minute for both the iPhone 4 and 4S have been discussed at great length, but I don't have any links handy so I took a quick look at some of my movies and my iPhone4 is about 1.25 MB/sec at 720p. Obviously the 4S is more.

Its almost exactly 180MB per minute of 1080p video... a little less. Kinda wish I got the 32GB now, but whatever I'm not going to be shooting much video unless I'm at a big event (mainly concerts), in which case I'll sync to the computer and not have much of a need to carry the videos with me anyway.

Yea but say you are just recording in different environments and settings. That will also come into consideration.
