There are many variables involved.
There is no way of really telling how much space a video will take up.
Its almost exactly 180MB per minute of 1080p video... a little less. Kinda wish I got the 32GB now, but whatever I'm not going to be shooting much video unless I'm at a big event (mainly concerts), in which case I'll sync to the computer and not have much of a need to carry the videos with me anyway.It's very easy. Record for 10 minutes and that's how much space it takes up. There is no reason to believe it will be much more or less for different recording sessions.
With all that said, the size per minute for both the iPhone 4 and 4S have been discussed at great length, but I don't have any links handy so I took a quick look at some of my movies and my iPhone4 is about 1.25 MB/sec at 720p. Obviously the 4S is more.

Yea but say you are just recording in different environments and settings. That will also come into consideration.
