This is an issue that has been bugging me for quite some time, even in Sierra. And it just happened again with High Sierra, so it appears is not OS related, but I'll share it here all the same.
When I'm at my desk, I use a Caldigit TB3 dock, which has a HDMI out to one of my monitors (HP ZR2440w), and I use a USB-C (TB3) to HDMI adapter connected to the TB3 port of the dock for the second monitor (same model).
When I finish working, I usually eject all my drives and put the computer to sleep. Then I go home.

When I open the lid at home, everything looks normal, it asks for my fingerprint to login, but the screen is completely black. If I try to close and re-open the lid, same thing. I can even lock it back using the Touch Bar, and re-login, and the same issue. The only way to make it work is by hard resetting, or using spotlight (blindly) to run terminal, then issue a sudo reboot, and the password. But even sometimes that didn't work either (can't see anything, so I don't really know if I'm typing correctly).

Any ideas how can I fix that? Should I simply shutdown the computer when I finish? Seems odd to me.

Thanks

Two suggestions:
1: Just settle with a work around such as shutting down or trying to disconnect displays before sleeping.
2: Play around with terminal and using "pmset" to check/change "hibernatemode" from what I understand there are quite a few ways the computer can handling sleeping that are determined by the value here as well as the "darkwake" value.
I don't have much experience with these commands, but I know this can help with sleep problems from hackintosh experience (still native Mac appropriate). https://discussions.apple.com/thread/4148217?tstart=0 might help

I had similar problem with my setup.
I fixed it by changing the on/off monitor settings to on (the one that switches it off after a few hours) so basically its always On but doesn't appear to be, when mac sleeping.
I also did this https://support.apple.com/en-us/HT204063
Thirdly after finishing work I walk away and let the mac sleep after 30mins
Next day I move the mouse and everything fires up, unlocks with apple watch, nice bonus.
hope this helps as it is frustrating
cheers
