just updated winterboard and something system-level from cydia.
when i rebooted, the date/time on the statusbar (from sbsettings) comes up as red text (instead of white, as it's always been).

any idea why? or how i can get it back to white text?

This happened to me as well and pissed me off. I had all my fonts set to white. When I rebooted my clock was white. I had to turn off white font in Winterboard to make it go back, so now any color I change my font to changes the clock color to that.
This was a result of updating your mobile substrate. I sent Jay Saurik an email asking if he could fix it back. I doubt he responds.

Are you using any themes that have an Info.plist containing a TimeStyle element? Timestyle was not working on iOS5 until this new version of winterboard.

It is possible that you had this TimeStyle Element with a color of red which only took affect after you updated winterboard.
 
I bet the easiest thing to do in your case would be to search Cydia for 'fonts'. Download color fonts. Go in winterboard and choose the color you want and it will change the clock to that color.

I'm betting if you turn you icon labels on, they are red, too.

brilliant, found an info.plist in my default theme, saw text listed as 'red', changed to 'white'...and all is well.
