Newest ios, 16 Pro. Say I get a text with a Reddit link and I click it,

The link ALWAYS opens safari instead of the Reddit app. It used to never do this until a few months ago.

Any idea why? Restart, delete app, etc did not work.

When you want to be sure don't tap the link, hold it and press "Open in Reddit".

This. iOS has no way to set the default app to handle opening a link so it will use the last one that opens it by default. As such if you tap and hold and choose open in Safari, it will use Safari from then on until you go back and tap and hold and pick open in “app”.
