I have a 3GS with baseband 4.26.08 (old model week 26).

If I update with redsnow to the latest 4.2.1 firmware jailbreak will it update my baseband ? If yes how can I preserve the baseband and update to 4.2.1 ?

You need to update using a custom firmware created with Pwnagetool. If you update any other way, you will also update the baseband. And, you definitely want to keep that baseband forever. It's a very stable baseband to unlock.
