I am in the process of getting a replacement 8 plus for a screen issue.

If I decide after receiving the replacement that I want to return that as well, do I still have the option of a full refund as I should still be within 14 days of receiving the original phone?
 
14 days of the original unless you did a trade for a higher GB model, different color etc, basically as in return and buy. In that case it will be seen as a new transaction so 14 days from purchase again. I traded in my 32GB Matte iPhone 7+ for a 128 GB Jet Black (no Matte available :(). I traded in the original received a credit then paid the difference, so I had a new official purchase date. In your case you are simply getting a replacement so its still the original 14 days for you, and you should still be able to get a refund.

Being that the replacement device is considered a 'new' device as a separate iPhone from the original purchase, you will have a new 14 day return period with the replacement device to make the return altogether.
