Today I noticed that the iPad3 16gb on the Apple Store site says it's out of stock... Should I keep on checking on a daily basis to see when it's back in stock? Anybody know how they restock or when I can expect for it to be available?

Absolutely. They had them in stock yesterday. Just keep checking back.

After hesitating and not ordering last friday, and them being out of stock over the weekend, I ordered mine monday this week. I have been checking back periodically throughout the week out of curiosity. Check back tomorrow between 12:00 and 1:00 pm EST. That seems to be when they are added back to stock everyday.
