"Connect My Mac" is the only iPad app I can remote into Lion flawlessly so far while VNC only works 1 out of 10 times. The only problem I have so far is that I can do multiple logins to my 2011 Mac mini server without freezing up the screen, but I can't do the same thing to my old 2009 Mac mini running Lion client. Does it have anything to do with server vs client or dual-core vs quad-core? They both equipped with 8GB RAM by the way.

Hard to answer without more info. But Lion changed the way Screen Sharing on the Mac interacts; you can now connect to individual user accounts, so you have to have a VNC client that realizes this and allows you to enter username and password for the account, otherwise you are likely to get hung at a log in screen.
