How do I remove a few emoji's from frequently used (recent)?

By using different emoji until they are pushed out of the list.

You can do it all at once.
If you’d like certain ones there asap then text a friend or business (knowing it’ll be a landline) a couple times with all the emoji you’d like. Tap them a few times if necessary. It usually works in 2 texts for me. Text the grocery store. No one cares and it won’t go through anyway. I think you need 30 different emoji to clear the list. I just add food and cars when I run out of my favorites.
