As much as I love the Red explicit tags next to the songs in my itunes library, how does one go about removing them?

or go back in time and shoot Tipper Gore and the rest of the PMRC.
 
Maybe I misunderstand the question, but try;

Preferences> General> Show content ratings in library (Uncheck)
 
It's interesting that iTunes doesn't let you mark your own music as "Explicit" or "Clean" in the Get Info settings. That would be helpful for making a smart playlist for work.
