Is there a way to remove files from a disc image that has already been written? Perhaps a disc image "editor"?

I have a video DVD that I made a while back that is too large for one DVD so it's formatted for a Double Layer DVD. Since burning that image, I have deleted all of the reference files. I now need to burn most of the contents to a single-layer DVD... but I don't need everything that's on the image. I would love to take out a few of the video files from the image, thus shrinking the image and preserving the DVD menus contained in the DVD.

Any ideas?

You would have to convert it to a read-write disk image (which may or may not replace it - can't remember) and then you could remove the file.
