Here is my mail app:

Why can I still see the [gmail] folders?

Can i get rid of the [gmail], all mail, starred, and spam? I also have another sent messages at the bottom. Not sure why thats there as I have a sent folder up by inbox.

Not sure about GMail around the globe but in the US the IMAP "Show in IMAP" settings don't really work with GMail setup as Exchange, if that's how you're configured.
 
I don't think you can get rid of those. The way I understand it, you "star" an email on your phone by "moving" it to the GMail/Starred "folder" and you mark an email as spam by "moving" it to the GMail/Spam "folder".
