I just installed Windows 7 on my computer and forgot to back up my pictures. All the pictures in my Camera Roll are fine but I had another folder from my last restore. How can I take these pictures off my phone then re sync them?

Search the forums for this. There are programs you can buy that do this. (iTunes won't.) I know they've been mentioned before, but I can't remember their names.
Be warned that the photos on your phone are all low-quality shrunken files, NOT the original images. The iPhone is not a backup device.

If I'm understanding you correctly, the same thing happened to me so I emailed the pictures to myself from the iphone. Then downloaded them from email on my computer.
Just plug the iPhone into your computer. Drag and drop in Windows Explorer. Simple.
