You wont find anything in system preferences.

Go to www.freerangemac.com and download Transparent Dock. That will do the trick :)

Edit- Ive noticed that when using it to remove text on the dock, it also removes the text that appears over a window when you use the "all windows" expose. Which is odd
 
Anyone know of a tool for Leopard that will do this? I know all of the icons in my dock, and I don't need a pop-up telling me what they are. Anything that will remove the text bubbles when I mouse over an icon would be great!

Place the dock on the left or right.

Do you mean because now the text pops out to the side of the icon when the dock is placed on the left or right versus above the icon like when the dock is at the bottom? :confused: I ask because it does not change the fact that the text still appears so it is not removed like the OP asked about.
