Itunes downloaded the wrong album cover for one of my albums (or discs). I found an image of the correct one and made a jpeg of it but cannot find out how to remove the old cover. Any suggestions?

Just mark all the songs on the album, and open the Multiple Item Information window (cmd-I), and drag the new jpeg to the Artwork window within that, that replaces the old artwork.
 
I found this to happen a lot. When I sent our for the artwork for some of my Led Zeppelin collection, it came back as Dread Zeppelin. Either someone has a sense of humor or iTunes just messed up.

You can also right-click (or control-click if you're using a single button mouse) on the song (or highlighted songs) and choose to "clear downloaded artwork" and it does the job as well.

Just an fyi but the "clear downloaded artwork" doesn't work for songs that have the artwork embedded into the file (how it was done pre-iTunes 7). You've got to use the get info method for those.
