This probably seems like a silly basic question, and I'm usually very tech savvy, but I managed to mess this up before and lost about 2 years worth of photos :mad:

I need to make space on my phone, so want to take all my photos off it, but don't want to lose them all permanently.

If I download everything into iPhoto (that will do photos and videos right?) and then sync my phone with the option for syncing photos off, will that do it?

Yup - I've done this several times. Import the photos/videos in iPhoto and then delete from your iPhone (it prompts after it's done importing). Then just create an album in iPhoto to group those pictures. You can then put them back in your iPhone at some point, but of course it won't be in your camera roll anymore.
