when you remove a app from cydia does it fully get removed from your iphone or does it leave anything left behind that could contribute to errors or problems in the future? or just leave evidence of being installed before?

As far as I know, you should be fine. However, I downloaded fontswap on my phone and changed the font of the lockscreen clock. After realizing the app wasn't able to change system fonts yet since it wasn't compatible, I deleted it and rebooted. However, the lock screen clock font is still changed.

Uninstalling packages in Cydia can leave configuration files on your phone, but they should not cause any problems. You can manually delete them if you want.
