I run Mojave on a 2014 Mac Mini and would like to upgrade to Monterey but (See pictures) the hard drive is inside a container file and I've no doubt that will cause problems. The same applies to my backup file. Is there any way of removing the container files?
 
There are no pictures. Anyway, if you are after clean install of Monterey, download Monterey and create external USB install media. Many tutorials on web.

Backup your Mac.

Boot from USB and erase internal storage. Make sure to erase entire disk, not just volume/container. Install Monterey to internal storage. Many tutorials on the web.

Restore data from backup if you want.
 
I tried clean install of Monterey but had more problems so returned to Mojave. Sorry, I forgot the pictures which I've enclosed below. Can I upgrade to Monterey instead of a clean install?
