Hi I am currently running iOS 13 developer beta and watch OS 6 beta

How do I go about removing them? Is it just as simple as deleting the profiles then they will just receive iOS 13 and watch OS 6 when the official releases happen in the next few weeks
 
There is no way of restoring Watch OS to non developer. You are stuck with it or you can send it in to Apple to restore for you.

As for your phone, you will need to restore IOS 12 using itunes I think.

You have to go back to an iTunes archived backup to get out of iOS 13. What you can do is get out of the beta program by removing the profile. Then, when the final release of iOS 13 is released you'll get that.

And I'll be honest: don't go to 13.1 beta if you plan on getting iPhone 11 or any of the new devices. Betas tend to cause a bad versioning problem.
