Does anyone know if there is any email client on masOS, that will allow one to edit the subject line of INCOMING email? This can be done on Windows, with an Outlook client. But, I am yet to find a solution on masOS.

PS: some individuals are awful at creating subjects in emails. Makes the email harder to find, months later. :(
 
Does Outlook for Mac offer the ability? I've never heard of doing such a thing, so I don't know. That being said, wouldn't a simple search for whatever term(s) find the email anyway?

No, Outlook on Mac does not offer that. While a search should find the email. The problem often is the email subject and sometimes the content is a bit 'off' from the real issue being discussed. Hence, I often change the subject to be relevant and easier for searching.

Working in IT, often a user would discuss an issue, and the content details would name items that are not related to the issue. Monthly later, if I need to search that issue, I would search for the item in question, versus what the user entered in the email.

Example: My computer is not displaying the page properly...
Actual issue: My Outlook application is not showing emails in the preview pane...
