Hi

Is there a 1TB hybrid drive out there? I currently have a Seagate Momentus XT 750gb
in my non-retina MBP.

There isn't a 1TB Hybrid out there right now unfortunately. There is only one 7200rpm 1TB 2.5" drive on the market right now and that is the Hitachi.
 
I just installed the new Seagate Hybrid 1TB 2.5" (model#st 1000LM014) in my wife's mis 2010 13" MBP. Seagate no longer uses the moments name and now just call it Hybrid. Cost from B&H 119.00 and free delivery. She has been very satisfied with the speed increase so no need for a new computer for her yet, have a Samsung 500GB 840 EVO preordered for my 2011 15" MBP.
 
They seem to have gone from 7200rpm down to 5400. Does this make a noticeable difference?

I would imagine only for 500 and 750GB Drives.(Even still, it won't be that huge of a difference) Almost all 1TB 2.5" HD Drives are 5400rpm anyway, so it will definitely be huge improvement for boot files and frequently used applications.
 
I was originally concerned with 5400rpm but that is not even noticeable. Seagate by the way no longer makes 7200 rpm drives as the blend of SSD and HDD more than makes up for the difference.
