anyone with a recent replacement know what they ran on the phone? just curious because i'd like to take my phone in for replacement but maybe not at expense of losing jailbreak just now.

It will have iOS 7.1 by now I'd say.

You may be lucky and get an old one, but I doubt it.

I think the OP means, will it have 7.0.6 or earlier, or 7.1 or newer.

OP, it's really going to be luck of the draw. I'd say there's a good chance it will be 7.1 or newer, but you really never know. It's 100% dependent on the specific store you go to, and what they have in the back room that day.
 
I just got a replacement 5s 64Gb iPhone from the apple store here. When it was unboxed, it was running 7.04. I'd imagine the turnover rate on the 64Gb phones is slower than the 16 so there are more older ones sitting on their shelves longer.
