Hello, I have an old Santa Rosa 17 MBP, and i want to replace my hdd with a newer 7200 rpm model. I will leave my old HDD intact, but at any point in time can i put it back on my MBP and boot normally from it ?

Yes. If you leave your stuff on the old hard drive (the operating system, your files, etc.) then yes — if you ever put it back in, it would boot right up.
 
Thanks! And if I put it in another Macbook it will still boot ?
