I am used to the feature in Outlook where you can reply to an email and insert your responses in the body of the email from the sender. It inserts your name (RESPONDENTS NAME) and then has your text in a different color. Where do I set up the same functionality with a MAC?
 
Don't know if this is satisfactory for you, but what I do in Apple Mail is click the reply button and then insert my cursor in the sender's email where I want to insert my response, hit the return key and then start typing.

The sender's text is in blue and my reply text is in black. If one wants, you can select the black text and change the color.

If I get a reply to mine, then both my text and the sender's text are in different colors. So, can do the above again....and keep doing this as needed....
