Replying from One account in Mac MAIL?

HI

I have three email accounts set up in my Mac mail. What I want is a system whereby where ever I receive an email from - when I hit reply it only sends it back from one account.

I know I can manually choose which account an email is sent from, but I would like to set a default email for replying.

I have already set the default email for new emails, which works fine.
