Mac OS X has had the option for a Blue or Graphite appearance for years. The Graphite theme replaces the red/yellow/green buttons and blue selections with grey. It's the same neutral tone that's carried-over to the Pro apps.

I want it in iOS 7 because the dark keyboard and Safari Private Browsing Mode look so much better and is easier on the eyes when in a dark room or at night. I'd even be fine if the option were restricted to system elements and built-in apps, so developers could do whatever color scheme they want.

What do you think?
 
I think it would be nice to have the choice. I, for one, would appreciate a dark theme to go with my black iPhone, although I do like the white appearance so far. The option would be very welcome.

Also, I suggest that you send a little feedback to Apple (if you haven't already), as it's the only real way of suggesting it to them:

I guess it would fall under 'enhancement request'.
