In terms of securely wiping your data (such as giving your old iPhone to someone else), which one is better Reset->Erase All Content and Settings or doing a DFU->Restore?
 
I think using Erase all contents and settings should be adequate for what you want to do.
 
Regardless of which you choose, you'll end up restoring your iPhone. Just make sure to set it up as a new device.
 
If you do it through the phone, you'll be put into recovery mode where you will then have to restore the phone through iTunes, whereas if you just restore it through iTunes, you'll get the same results, just faster. ;)

I always restore through iTunes, always seems the safest.
