Restore Backup but not update to 3.0?

I lost all my contacts on my Address Book and want to restore them from iTunes. How do I do a restore but not update to 3.0?

It is not giving me that option.

DAMN if only my contacts would have gotten lost four days ago before the 3.0 update was out.
