I restored my iPhone from the most previous backup (phone was locked and the buttons were frozen, wasn't able to unlock it!) and I lost all my pictures. Is there anyway tonged my pictures back or anyway to prevent this from happening in the future?

Why? You either have the pics in your backup or you don’t. If you restored from the backup and didn’t get your camera roll back, then there aren’t any.

Not true, the backup didn't save or restore my camera roll pictures but there are iPhone backup extraction software sold for this exact reason.
Just like when people lost their pictures when they did the spirit jailbreak
