I want to go back to a older version of a recently updated app.
I should have a older version of the app saved in iTunes.

Don't want to do a full wipe and restore,
just want to restore a single app.

I would delete the current app on the iPad.

Then connect to iTunes,
but the sync process is always a mystery, never sure what it will do.

Can I use iTunes and just copy over that one app?

Do I need to set some settings in iTunes
before connecting so it does not change any thing else on the iPad?

If the older version is in iTunes, don't connect your iOS device. Open iTunes, select the app and say "open location" to get to the filesystem directory were it's stored. Make a copy of it someplace else for safety. This will be useful if you mistakenly 'upgrade all' your app library.

Delete it from the iPad and connect to iTunes and sync. It will copy over the iTunes library version.

Thanks so the sync will only copy the desired app, many leave all else?

Actually, I don't sync just clicking sync will do it. I think you need to drag and drop the app onto the iPad. Or check it in the "apps to be synced" box.
