iPhone Restore options icloud

Hi. I get my new iPhone in the mail today and I’m not sure if I’m going to set it up as new or use a restore from backup. I like the fresh feeling by set it up as new, so I’m wondering, if I choose restore from iCloud backup what can I choose there? Only settings like location settings and Siri? Never done it before. I don’t want to restore my apps
