Does anyone know of a setting or tweak where when you tell lion to restore windows after a restart or log off that Lion restores the apps as minimized, and not open and in your face when you log back in? if the app was minimized to begin with, it restores open, not liking this

It's doubtful at this point, perhaps Apple will make that adjustment in a future update.
I recommend sending Feedback to Apple with your suggestion. (It looks like they haven't updated their drop-down menu to include Lion so make sure to note that in the comments section.
