Okay, so I'm still new to iOS. I've had my iPhone (Verizon iPhone 4) for about two months, had it jailbroken since day 1, and decided earlier to restore it to stock because of a few problems I was having. Only I made what I think was a pretty big mistake and just did Erase All Settings and Content from the Settings app. The spinning circle was up for a long time and I eventually just did a reboot out of it.

The phone is still jailbroken, and I restored all my iTunes apps to it. Jailbreak tweaks that I had, such as swiping to change music on the lock screen, are still there. My jailbroken apps are gone though. More importantly, so is Cydia. Google turned up some results of people just running redsn0w again, but I've done it a couple times and still don't have Cydia.

I can't find a way to manually install Cydia, so I assume the best option is to go back to stock 5.0.1. However, when I try to restore the phone through iTunes, it says restoring will also cause it to update to the latest software, and I don't want 5.1 because I want to be able to use Cydia apps.

I tried restoring with a stock 5.0.1 IPSW through iTunes, but it gives me an error 3194 saying an unknown error occurred. Another place I read said to uncheck the "Set Hosts to Cydia on Exit" option using TinyUmbrella, but that didn't correct it.

So my big question is, what can I do? Is there a definitive way to get back to stock 5.0.1? I feel like there has to be, I'm just still too new to iOS to figure it out. I appreciate any help I can get.
