Is it possible under iOS 8? Previous offered solutions of modifying the info.plist and manifest.plist files on the iTunes backup does not appear to be working under iOS 8.

Restoring 8.2 Beta iTunes Backup to 8.1.2

Download iOS 8.1.2 and click check for update + shift button for windows or Alt/option for Mac and choose 8.1.2 ipsw. And let the process to complete. You'll loose nothing and will be back on 8.1.2 .

I tried doing that and I lost my messages. I had to recover back to iOS 8.2 beta 4.
