Restoring apps and settings

I had my 1tb internal HD (stock) go corrupt on me and I didnt have a backup (lesson Learned). I have installed a new HD and was wondering if it is possible to grab my settings and some apps from the app folder on the old HD if I am able to access it?

Thanks for any suggestions
