iPod touch Restoring contents of an ipod touch

Hi:

I like to know if it is possible restoring the contents of an ipod touch...I have special interest in preferences of programs, as VPN, or WiFi preferences, etc....I know that there is no problem with contacts, ical...music...etc

In itunes, in preferences menu, there is an icon called syncing where it says:

" The following ihones and ipods are backed up on this computer"

- How can I manage this ? I didnt found any info about this

What parts of contents of my touch are backed up?
