Restoring from a backup--how?

Took our iPad Mini to the Genius bar. They said the iPad had been backed up a few days before, so I took them at their word.

Now, I see that there are a lot of photos missing, and some videos.

I THINK they're backed up. The trouble is, I can't find a plain statement anywhere as to how to restore them, if they haven't somehow been deleted permanently.

Can anyone tell me how to restore files from the iCloud on an iPad Mini? Thanks.
