Restoring from Backup Question

When I connect to iTunes my phone sometimes does a backup. Where on the computer are backups stored? I have a windows XP system. Can more than one backup be stored or does it overwrite it every time it does a backup? Also if I wanted to restore from a backup can I pick the one I want to restore from, provided that more than one backup can be stored.
