iPhone 16 Pro Max Restoring from backup with iUp Program?

This is my first year upgrading on the iPhone Upgrade program (UK) and I'm a little bit unsure on how the switchover works...

Every year I've done it before I've had both phones for at least a few hours to transfer everything over and stay in contact during the time.

Do Apple give a grace period where I have to send the phone off with X amount of days or will they at least let me have both for a while in the store whilst I restore my new phone and make sure it's all set up right?

Failing that, I'm backing up to my MacBook now as I type this, they'll let me sit in the back and restore there right?

When I have done it in the past you give the old phone in at the store when you pick your new one up. I usually restore from an icloud backup or set it up as a new phone.
