Restoring from time machine- selected files only

I've just installed a new HDD and i only want to restore certain files.
Basicly things like mail, itunes, iphoto, safari settings.

But when i try and restore (by drop and drop) from ~libaray/mail/ it does not seem to restore anything.

Can anyone inform me of the correct way of restoring please. Thanks.
